I have this diary that I’ve kept ever since I was a teenager. It contains notes and scribblings or recipes or cooking tips that I’ve come across all these years. But rarely do I have time to go through it because of professional and house work. The diary is so tattered now – thanks to my little ones. But one fine day, I find one page pinned to the refrigerator with my younger one’s own fine art. I used to make this before and I decided to make it again but when I visit Goa (I find that the cuts and portions of pork we get in Goa are better). And so presenting the recipe of the Crumb Fried Pork. My kids enjoyed it and it so happened that my best friend, Miscia came visiting with her little one, Myola. The kid doesn’t eat pork. But these crumb fried pork pieces caught her fancy and she ate a few, all the while enquiring what it was. We kept her guessing. Did we do wrong 🙂 ( For a recipe of fried pork chops, see here )
Serves: 5 to 6 Persons
Prep. Time: 20 Mins. + Marination
Cooking Time: 40 Mins. + 15 Mins.
Ingredients:
- Pork Belly (skinned, boneless) – 500 gms
- For the Marinade:
- Light Green Chillies – 3 to 4
- Garlic – 8 cloves
- Ginger – ½ inch
- Black Pepper Corns – ¾ tsp.
- Turmeric Powder – a small pinch
- Vinegar or Lime Juice – 2 tbsp. or to taste
- Egg – 1 or as needed
- Bread Crumbs – as needed
- Pepper Powder – a pinch
- Oil – as needed for frying
- Sea Salt – ¾ tsp. or to taste
Step 1: Take the skinned chunk of pork and wash and drain it. Take a fork and poke it all around. Massage with the sea salt and leave in the refrigerator for 8 to 10 hours or overnight (overnight works best).
Step 2: Later, take the pork in a pot and add 500 ml water to it. Place on low heat and cook till the meat is tender (about 40 mins). Then switch off the heat and let it cool (see note below).
Step 3: Once the meat is cold, take it out of the pot and slice it thinly (½ cm thick) Keep aside.
Step 4: Grind the ingredients of the marinade using 2 tbsp. of the pork stock. Apply this marinade to the pork slices and leave aside for 15 minutes.
Step 5: Whisk the egg with a pinch each of salt and pepper. Spread the bread crumbs on a plate.
Step 6: Dip each slice of pork in the beaten egg. Then coat with the bread crumbs on all side and leave on a plate.
Step 7: Heat 3 tbsp. oil in a frying pan and when hot, place the crumbed slices of pork on it and fry them on medium heat for 2 to 3 minutes on each side till nice and crisp.
Note:
- The meat has to be cooked well (well done) while boiling.
